The Challenge: Prep Your Lunch Before Bed
How many times have you skipped lunch because you were too busy? Or grabbed something totally random, unsatisfying, and not at all in line with your goals—just because it was fast?
Yep. Same.
When you have lunch ready ahead of time, eating well becomes effortless. You save time, reduce decision fatigue, and actually get to enjoy your break, instead of spending it rummaging through the fridge trying to figure out what to eat.
What to Do Tonight:
Before you go to bed, prep your lunch for tomorrow.
🍚 Leftovers? Perfect! Pack them up in a container.
🌿 Salad? Pre-chop and portion everything so it’s ready to go.
🥪 Sandwich or wrap? Assemble it now and store it in the fridge.
🍱 Meal-prep boxes? Go for it! Pack several days’ worth of lunches if you’re feeling extra productive.
If you need to prep lunches for your kids too, knock them out at the same time! Future you will be so grateful.
Or… Buy It Pre-Made!
If making your own lunch feels overwhelming, there’s no shame in a store-bought solution.
Years ago, when my kids were all in elementary school, I visualized my perfect day. One of the things that stood out? I actually sat down and enjoyed lunch.
So, I started buying pre-made, high-quality lunches from a grocery store. My favorite was lobster risotto. (Yes, past me was living the dream!) I stocked my fridge with five meals for the week, and it was the best thing ever. If grabbing pre-made options makes your life easier—go for it!
